Odd name. But one of the most refreshing coconut rum cocktails ever!

At the end of a too hot, lazy, summer afternoon, what could be better than sitting down with an ice cold refreshing glass of coconut water?

Giving it a gentle lift with a hint of lime and some coconut infused rum of course! Rehydrating whilst simultaneously dehydrating! You’ve got to bring balance to the force after all. 😉

Brown Nut Monkey Head

Light, refreshing and vaguely nutty - coconut water is a super healthy alternative to coconut milk or crème de coconut - it’s low calorie and jam-packed with electrolytes and minerals.
When you combine it with the acidity of lime and the richer notes of coconut infused rum, you arrive at the kind of drink that’s actually drunk by people who live in the tropics.

A refreshing drink made from coconut water, coconut rum and lime juice

Ingredients

  • 2 oz Coconut Rum
  • 6 oz Coconut Water - preferably straight from a coconut - but shop bought will do
  • 1/2 oz Fresh Lime Juice - this works out to roughly half a lime
  • Half a spent Lime shell
  • 1 Sprig of Mint

Method

  • Pour all ingredients into a shaker, then add enough ice to show above the surface of the liquid.
  • Shake vigorously for around 15 seconds and strain into a highball filled with ice - OR, even better, a monkey tiki mug or a coconut half shell!
  • Garnish with the spent lime half, clap the mint sprig to release its oils and then work it down the side of the glass into the ice.

Created at the Asolare Restaurant, that overlooks the bay at St. John, U.S. Virgin Islands - sadly it was completely destroyed by the hurricanes, with no plans to re-build or re-open.
The English word ‘coconut', comes from the Spanish and Portuguese word ‘coco', which means 'monkey face.’ Explorers saw a resemblance to a monkey's face in the three round markings or ‘eyes' at the base of the coconut. Variations

Feeling extra lazy? Just build the drink over ice, it really won't hurt. We like to shake it when possible as it thoroughly mixes the citrus and brings its brighter notes to the fore.
No coconut rum to hand? 2 ounces of amber rum makes for a lovely combination as well, just make sure you choose one that doesn’t overpower the delicate flavour of the coconut water.
Want to go totally tropical? We highly recommend making your own coconut infused rum - it’s SO easy, far cheaper and way tastier than shop bought. You can adjust both the sugar and alcohol content based on personal taste, using as little or as much as you want.
